Description:

The ripening process for the various types of cheese depends on how they are processed and plays an important role in determining their overall taste. In accordance with BSS /15:2010/, the cheese must be ripened to at least 14.0%. BSS  /15:2010/ regulates the value of salt content in Bulgarian white brine sirene (cows milk) to no more than 3.5±0.5%.

According to BSS /15:2010/, Bulgarian white brine sirene (cows milk) may contain up to 46% dry matter and up to 54% water content. The higher the water content, the lower the dry matter and the lower nutritional value.
